I f you don't like fruit cake, try this crowd-pleasing alternative that can make several small cakes to give away as gifts. Macadamia nuts can be substituted for the pecans. (This cake may not look exactly like the image presented here.)

• Ingredients: flour, baking powder, salt, candied pineapple, candied cherries (both red and green, if desired), eggs, sugar, pecan halves
• Use 2 springform pans or loaf pans of any size
• Makes about 6 lbs. of cake
